  • 2 unit zucchini medium, thinly sliced
  • 1 unit eggplant medium, thinly sliced
  • 1 unit onion chopped
  • 2 clove garlic minced
  • 3 cup tomato sauce fresh or homemade preferred
  • 2 cup spinach roughly chopped
  • 2 cup ricotta cheese
  • 1.5 cup mozzarella cheese grated
  • 0.5 cup parmesan cheese grated
  • 12 unit lasagna noodles preferably whole wheat or no-boil
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon black pepper
  • 1 teaspoon salt

Method
 

Preparation of vegetables and sauce
  1. Preheat the oven to 180°C (356°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until golden and fragrant.
  3. Add minced garlic, zucchini, and eggplant slices. Cook for 5–7 minutes until slightly tender. Stir in the spinach and cook for another 2 minutes until wilted.
  4. Add the tomato sauce, oregano, basil, salt, and black pepper. Simmer on low heat for 10 minutes. Remove from heat.
Assembly of the lasagna
  1. In a baking dish, spread a thin layer of tomato sauce on the bottom.
  2. Arrange a layer of lasagna noodles over the sauce. Top with a layer of vegetables and sauce, then dollop with ricotta cheese and sprinkle mozzarella cheese over it.
  3. Repeat the layers: noodles, sauce with vegetables, ricotta, mozzarella, until all ingredients are used. Finish with a layer of sauce and top generously with mozzarella and parmesan cheese.
Baking and serving
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake uncovered for an additional 10–15 minutes until the cheese is bubbly and golden.
  3. Let it rest for 10 minutes before slicing. Garnish with fresh basil, if desired. Serve hot.
