  • 2 units eggplants medium-sized

  • 0.5 teaspoon salt
  • 0.25 teaspoon smoked paprika optional

Method
 

  1. Preheat your oven to 220°C (428°F). Line a baking sheet with parchment paper.
  2. Prick the eggplants with a fork and place them on the prepared baking sheet. Roast for about 30-35 minutes, turning occasionally, until the skins are charred and the flesh is very soft.
  3. Remove the eggplants from the oven and let them cool slightly. Once cool enough to handle, peel off the skin and discard it. Place the flesh in a colander and let it drain for a few minutes to remove excess moisture.
  4. Transfer the drained eggplant flesh to a food processor or a mixing bowl. Add tahini, minced garlic, lemon juice, olive oil, salt, and smoked paprika (if using).
