  • 1 cup radishes thinly sliced
  • 1 cup romaine lettuce chopped
  • 0.5 cup fresh parsley chopped
  • 0.5 cup fresh mint chopped
  • 0.33 cup extra virgin olive oil
  • 0.25 cup lemon juice fresh
  • 1 teaspoon sumac
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Method
 

  1. Preheat the oven to 180°C (350°F). Cut the pita breads into small squares, place them on a baking tray, and toast until golden and crispy, about 7-10 minutes. Set aside to cool.
  2. In a large salad bowl, combine the chopped cucumber, diced tomatoes, sliced onions, radishes, romaine lettuce, parsley, and mint. Toss gently to mix everything evenly.
