  • 2 unit tomato diced
  • 0.5 unit red onion thinly sliced
  • 0.5 cup radishes thinly sliced
  • 0.5 cup parsley fresh, chopped
  • 0.25 cup fresh mint chopped
  • 0.25 cup extra-virgin olive oil
  • 0.25 unit lemon juice only
  • 1 tablespoon pomegranate molasses optional, for authenticity
  • 0.5 teaspoon sumac spice or to taste, optional
  • 1 teaspoon sea salt to taste
  • 0.25 teaspoon black pepper

Method
 

  1. Preheat the oven to 180°C (356°F). Cut the pita breads into small squares or triangles, spread them on a baking sheet, and toast for 6-8 minutes until golden and crisp. Set aside to cool.
  2. In a large bowl, combine the chopped romaine lettuce, diced cucumber, tomatoes, sliced red onion, radishes, parsley, and mint.
  3. For the dressing, whisk together olive oil, lemon juice, pomegranate molasses (if using), sumac, salt, and black pepper in a small bowl until well combined.
  4. Pour the dressing over the salad and toss gently to mix all ingredients evenly.
  5. Just before serving, add the toasted pita pieces to the salad and toss lightly to maintain their crunch.
