  • 4 slice whole grain bread preferably rustic, artisanal type
  • 2 medium ripe tomatoes diced
  • 1 clove garlic halved
  • 1 tablespoon extra virgin olive oil
  • 0.25 teaspoon sea salt
  • 2 tablespoon fresh basil chopped
  • 0.25 teaspoon black pepper freshly ground

Method
 

  1. Preheat your oven to 200°C (392°F) or prepare a grill pan.
  2. Cut 4 slices of whole grain bread. Toast them in the oven or on the grill until they are crispy and golden on both sides, about 4–5 minutes.
  3. While still warm, rub one side of each slice with the cut side of a halved garlic clove to infuse flavor.
  4. Dice 2 medium ripe tomatoes and place them in a bowl.
  5. Add 2 tablespoons of chopped fresh basil, 1 tablespoon of extra virgin olive oil, 1/4 teaspoon sea salt, and 1/4 teaspoon ground black pepper. Gently toss to combine.
  6. Spoon the tomato mixture evenly over each toasted bread slice.
  7. Drizzle a bit more olive oil on top, and serve the bruschettas immediately while crisp.
