Ingredients
  

  • 8 units fresh sardines cleaned, scaled
  • 2 tablespoons extra virgin olive oil plus extra for brushing
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 units lemons one juiced, one cut into wedges
  • 1 handful fresh parsley chopped
  • 1 clove garlic minced (optional)

Method
 

  1. Preheat your grill to high heat for at least 10 minutes.
  2. Pat the sardines dry with paper towels and place them on a tray.
  3. Drizzle olive oil over the sardines and rub it in to coat them evenly.
  4. Season the sardines generously with sea salt and black pepper. Optionally, sprinkle with minced garlic for extra flavor.
  5. Spritz the sardines with fresh lemon juice from one of the lemons.
  6. Brush the grill grates with olive oil to prevent sticking.
