Ingredients

  • 2 unit pita bread preferably whole wheat, toasted or baked
  • 2 cup chopped romaine lettuce
  • 1 cup cherry tomato halved
  • 1 unit cucumber diced, with or without skin
  • 0.5 unit red onion thinly sliced
  • 0.5 cup radish sliced
  • 0.5 cup parsley chopped
  • 0.25 cup fresh mint chopped
  • 2 tablespoon sumac find at Middle Eastern markets
  • 0.25 cup extra-virgin olive oil
  • 3 tablespoon lemon juice freshly squeezed
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Method

  1. Preheat your oven to 180°C (350°F). Cut the pita bread into small squares and toast for about 8-10 minutes until golden and crisp. Set aside to cool.
  2. In a large salad bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, radishes, parsley, and fresh mint.
  3. In a small bowl, whisk together sumac, extra-virgin olive oil, lemon juice, sea salt, and black pepper until well combined.
  4. Drizzle the dressing over the vegetables and toss gently to coat everything evenly.
  5. Add the toasted pita pieces to the bowl and toss again just before serving, so the bread remains crunchy.
  6. Serve your Fattoush salad immediately, garnishing with extra sumac or fresh herbs if desired!

Notes

Fattoush is a beloved staple of Lebanese cuisine, celebrated for its refreshing crunch and lively flavors. This vibrant salad is wonderfully versatile—perfect as a light lunch, an appetizer at dinner parties, or as a colorful side to grilled meats and falafel. Its delightful blend of crisp vegetables, aromatic herbs, and tangy sumac dressing stands out among Middle Eastern salads.

Expert Tips for Perfect Fattoush

  • Keep it crunchy: Toast or bake your pita bread until well golden and let it cool before tossing. Add it to the salad just before serving to avoid sogginess.
  • Ingredient swaps: Don’t have romaine? Try using mixed greens or even iceberg lettuce. You can also add diced bell peppers or scallions for extra crunch and flavor.
  • The power of sumac: Don’t skip sumac! This tangy spice gives fattoush its unmistakable lemony kick. If sumac is unavailable, increase the lemon juice, but the flavor won’t be quite the same.
  • Uniform chopping: Dice vegetables in roughly the same size for visual appeal and even flavor in every bite.

Extra Preparation Insights

  • Herb freshness: Use fresh parsley and mint. Gently pat them dry after washing to avoid wilting your salad.
  • Season smartly: Taste and adjust salt, lemon, or olive oil before serving. Fattoush should be bright and balanced.

Serving and Pairing Suggestions

  • Serve chilled: Fattoush is fantastic when chilled for 10-15 minutes before serving, which helps flavors meld together.
  • Pairings: Complete your Middle Eastern meal with hummus, baba ganoush, tabbouleh, or grilled chicken skewers.
  • Vary it up: Fold in crumbled feta cheese, roasted chickpeas, or pomegranate seeds for your own creative touch and added nutrition.
Let yourself play with seasonal veggies and make fattoush your go-to salad for gatherings. Its colors and zesty flavors will impress everyone at your table!
