Ingredients

  • 1 tbsp olive oil
  • 1 unit onion chopped
  • 2 cloves garlic minced
  • 800 g ripe tomatoes chopped
  • 1 tbsp tomato paste optional, enhances color
  • 500 ml vegetable broth
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper freshly ground
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp sugar optional, balance acidity
  • 50 ml coconut cream or Greek yogurt, for creaminess

Method

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, until soft and translucent (about 5 minutes).
  2. Add the minced garlic and cook for another 1 minute, stirring constantly to avoid burning.
  3. Stir in the chopped ripe tomatoes and tomato paste (if using). Cook for 5 minutes, allowing the tomatoes to soften and release their juices.
  4. Pour in the vegetable broth. Add sea salt, black pepper, dried oregano, dried basil, and sugar (if needed). Mix well.
  5. Bring the soup to a gentle boil, then lower the heat. Simmer uncovered for 20 minutes, stirring occasionally.
  6. Remove from heat and use an immersion blender to blend the soup directly in the pot until smooth. If you prefer a chunky texture, blend only part of the soup.
  7. Stir in the coconut cream or Greek yogurt for extra creaminess. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh basil leaves if desired. Enjoy your Mediterranean-style tomato soup!

Notes

Tomato soup is a timeless comfort food, loved for its versatility and ability to shine throughout the year. Whether you enjoy it on a chilly winter night or as a refreshing starter in the summer, this Mediterranean classic never disappoints. It’s also perfect for easy weeknight meals, cozy family lunches, or as an elegant appetizer for gatherings.
Insider tip: For a richer, deeper flavor, try roasting your tomatoes in the oven with a little olive oil and garlic before adding them to your pot. Roasting caramelizes the natural sugars and takes your soup to the next level. If you’re short on fresh tomatoes, high-quality canned tomatoes work beautifully.

Substitutions and flavor boosters

You can swap coconut cream with Greek yogurt or even a dash of heavy cream for a creamy finish. Prefer a kick? Add a pinch of chili flakes when sautéing the onion. If you avoid garlic, try shallots for a gentle, sweet flavor.

Perfecting your soup

Blend thoroughly for extra smoothness—an immersion blender is handy, but a regular blender (blending in batches) achieves a super silky result. If you love chunky textures, blend only half of the soup and mix it back. Add cream or yogurt at the end so it doesn't curdle.

Serving and pairing inspiration

This tomato soup pairs wonderfully with a slice of rustic sourdough bread or a grilled cheese sandwich. Top with homemade croutons, fresh basil, or a swirl of pesto for extra flair. For a heartier meal, serve alongside a crisp green salad or roasted vegetables.
Experiment with spices: a pinch of smoked paprika, cumin, or herbes de Provence brings bold personality to your recipe. Every cook has their own twist—don’t be afraid to make this comforting soup truly yours!
