Ingredients

  • 1.5 cup arborio rice
  • 1 liter vegetable broth kept warm
  • 0.5 teaspoon saffron threads
  • 1 unit small onion finely chopped
  • 2 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 0.5 cup dry white wine
  • 3 tablespoon parmesan cheese freshly grated
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon black pepper freshly ground

Method

  1. Heat the vegetable broth in a saucepan and keep it warm over low heat.
  2. Soak the saffron threads in a little hot broth to release their color and aroma.
  3. In a large pan, heat olive oil and butter over medium heat. Add the chopped onion and sauté until soft and translucent, not browned.
  4. Add the arborio rice and stir well to coat each grain with oil, toasting lightly for about 2 minutes.
  5. Pour in the white wine and cook, stirring, until it has mostly evaporated.
  6. Add a ladle of warm broth to the rice and stir until absorbed. Continue adding the broth, one ladle at a time, always allowing it to absorb before adding more. Stir frequently.
  7. About halfway through, add the saffron-infused broth and continue cooking. This whole process should take about 18–20 minutes, until the rice is creamy and al dente.
  8. Remove from heat and stir in the grated parmesan cheese, adjusting salt and pepper to taste.
  9. Serve immediately, garnished with extra saffron threads and parmesan if desired. Enjoy your Risotto alla milanese!

Notes

With its beautiful golden hue and delicate aroma, Risotto alla milanese is an iconic dish beloved in Italian cuisine. It’s famous for elevating any dinner, from family gatherings to special occasions, thanks to its elegance and creamy comfort. The classic Milanese version, flavored with saffron, pairs wonderfully with a variety of proteins and vegetables, making it surprisingly versatile beyond its traditional roots.

Practical Tips for Perfect Risotto

  • Choose the right rice: Arborio is the classic choice, but Carnaroli or Vialone Nano will give even creamier results due to their higher starch content.
  • Warm broth is key: Always add broth warm, one ladle at a time, stirring gently. This coaxes the rice into releasing its starch, creating that signature velvety texture.
  • Patience pays off: Resist the urge to rush! Stir frequently and let each addition of broth fully absorb—this is the secret to creamy, luscious risotto.
  • Saffron tips: Soak saffron threads in a small amount of hot broth before adding. This helps the color and flavor infuse evenly throughout the dish.

Ingredient Swaps and Enhancements

  • No wine? You can substitute with a bit more broth or a splash of lemon juice for brightness.
  • No parmesan? Try Grana Padano or even a touch of nutritional yeast for a unique twist.
  • Butter finish: For extra decadence, stir in a knob of cold butter at the end (the "mantecatura") for silkier results.

Serving and Pairing Ideas

  • Classic partnership: Serve alongside osso buco for a truly Milanese feast, or simply top with roasted mushrooms or grilled seafood for a lighter touch.
  • Creative garnishes: A drizzle of good olive oil, a sprinkle of fresh herbs like chives or parsley, or a few crispy shallots add layers of flavor and texture.
  • Make it your own: Stir in peas, toasted pine nuts, or even a bit of lemon zest to brighten the flavors and make each plate unique.
Whether you’re a seasoned cook or a risotto first-timer, following these steps will help you achieve a creamy, unforgettable Risotto alla milanese every time!
