Ingredients
  

  • 250 g phyllo dough thawed if frozen
  • 150 g mixed nuts such as walnuts, pistachios and almonds, coarsely chopped
  • 3 tbsp extra virgin olive oil or melted coconut oil
  • 2 tbsp unsalted butter melted (optional; you can skip for fewer calories)
  • 1 tsp ground cinnamon
  • 60 ml honey plus a little more for drizzling
  • 1 tbsp maple syrup optional, for a touch of flavor
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 50 ml water

Method
 

Preparation of Ingredients
  1. Preheat the oven to 180°C (350°F).
  2. Lightly grease a rectangular baking dish with a little olive oil or melted butter.
  3. In a bowl, mix the chopped nuts with ground cinnamon and lemon zest.
Assembly
  1. Unroll the phyllo dough and cover with a damp cloth to prevent it from drying.
  2. Carefully place one sheet of phyllo dough in the baking dish, brush with olive oil or melted butter. Repeat to make about 6 layers, brushing each one.
  3. Spread half of the nut mixture evenly over the layered dough.
  4. Layer and brush 4 more sheets of phyllo dough as before.
  5. Add the remaining nuts in an even layer.
  6. Finish with the rest of the phyllo sheets (about 6), brushing each layer. Brush the last layer well for a golden finish.
  7. With a sharp knife, carefully cut the baklava into diamond or square shapes before baking.
Baking and Syrup
  1. Bake for about 32-35 minutes or until golden and crisp on top.
  2. While baking, prepare the syrup: in a saucepan, combine honey, water, lemon juice, and maple syrup. Heat over low heat just until well mixed and slightly thickened, about 3-4 minutes. Do not boil.
  3. Remove baklava from oven. Immediately pour the warm syrup evenly over the hot baklava.
  4. Let cool completely at room temperature so the layers absorb the syrup and become crisp.
  5. Drizzle with a little extra honey before serving, if desired. Enjoy your healthy baklava!
