Baba ganoush is a creamy eggplant dip, easy to make and full of flavor. Great choice for healthy snacks and gatherings.

Method
- Preheat your oven to 220°C (428°F).
- Wash and dry the eggplants. Pierce them a few times with a fork and place on a baking tray lined with parchment paper.
- Roast the eggplants for 30-35 minutes, turning halfway, until the skin is charred and the inside is very soft.
- Remove from the oven and let cool for 10 minutes. Peel off the skin and discard any excess seeds.
- Transfer the eggplant flesh to a colander and gently press to remove extra moisture.
- Place the drained eggplant in a bowl. Mash with a fork until smooth.
- Add tahini, lemon juice, garlic, salt, and smoked paprika (optional). Mix well until combined and creamy.
- Drizzle with olive oil and sprinkle fresh parsley on top before serving.
- Serve your baba ganoush with pita bread and lemon wedges!
