  • 1 cup green beans cut into 2 cm pieces
  • 1 unit zucchini chopped
  • 2 cups baby spinach leaves
  • 1 can diced tomatoes 400 g
  • 1 can cannellini beans drained and rinsed
  • 1 cup small pasta like ditalini, uncooked
  • 2 liters vegetable broth
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 0.25 teaspoon black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 4 minutes.
  2. Add minced garlic, celery, and carrots. Cook, stirring occasionally, for another 5 minutes until vegetables start to soften.
  3. Stir in the green beans, zucchini, dried oregano, and dried thyme. Cook for 2 minutes to meld flavors.
  4. Add the diced tomatoes (with juices) and the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the cannellini beans and small pasta to the pot. Simmer uncovered until the pasta is cooked al dente, about 8–10 minutes.
  6. Stir in the baby spinach leaves and season with salt and black pepper to taste. Cook for 1–2 minutes until the spinach is wilted.
