Ingredients

  • 1 cup brown or green lentils washed and drained
  • 1 unit onion chopped
  • 2 clove garlic minced
  • 2 unit carrots diced
  • 1 unit celery stalk diced
  • 1 unit tomato chopped, or use 1/2 can of peeled tomatoes
  • 1 teaspoon cumin powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 5 cup water or vegetable broth
  • 1 unit bay leaf optional
  • 2 tablespoon fresh parsley chopped, for garnish

Method

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 2-3 minutes.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the diced carrots and celery. Cook for 3-4 minutes until the vegetables soften slightly.
  4. Add the chopped tomato (or canned tomatoes) and cook for another 2 minutes, stirring occasionally.
  5. Add the lentils, cumin, paprika, salt, black pepper, bay leaf, and pour in the water or vegetable broth. Stir to combine all ingredients.
  6. Bring to a boil. Then reduce the heat, cover, and simmer for 30 minutes or until the lentils are tender.
  7. Taste and adjust salt or seasoning if needed. Remove the bay leaf before serving.
  8. Serve hot, garnished with chopped fresh parsley.

Notes

Lentil soup is a beloved classic across many Mediterranean tables, celebrated for its heartiness, ease, and budget-friendly ingredients. Whether you’re seeking a comforting winter dish or a light yet filling meal, this soup adapts beautifully to your needs.

Practical Tips & Ingredient Substitutions

Lentils are very forgiving: you can use brown, green, or even red lentils for a slightly different texture (red lentils cook faster and yield a creamier consistency). If you don’t have celery or fresh tomatoes, simply omit them or use canned tomatoes. Adding a splash of lemon juice at the end will brighten up the flavors. For a savory kick, toss in a pinch of smoked paprika or chili flakes.

Preparation Techniques

Always rinse lentils under cold water to remove dust or debris before cooking. Sautéing your onions, garlic, and vegetables thoroughly builds a flavorful base. If you prefer a smoother soup, blend half or all of the mixture before serving. If you like your soup even richer, stir in a tablespoon of tomato paste during the sauté for depth.

Serving and Variations

Pair your lentil soup with crusty bread, a sprinkle of grated Parmesan, or a side salad. For a protein boost, add diced chicken, sausage, or chickpeas. Convert leftovers into a new meal by serving over rice or topping with a poached egg for breakfast. For an herby twist, garnish with fresh thyme or cilantro instead of parsley. Try drizzling extra virgin olive oil or plain yogurt just before serving to enhance the silky texture.
With these tips, your homemade lentil soup will become a staple, easily customizable to suit your pantry and tastes.
