  • 1 cup brown or green lentils, uncooked
  • 3 cup water
  • 0.5 unit red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 0.5 unit cucumber diced
  • 0.25 cup fresh parsley chopped
  • 0.25 cup fresh mint chopped
  • 3 tablespoon extra virgin olive oil
  • 1 unit lemon juice and zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon ground cumin optional

Method

  1. Rinse the lentils under running water and remove any debris or damaged grains.
  2. Add the lentils and 3 cups of water to a medium pot. Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes until the lentils are just tender but not mushy. Drain and let cool.
  3. Meanwhile, prepare the vegetables: finely chop the red onion, halve the cherry tomatoes, dice the cucumber, and chop the parsley and mint.
  4. In a large mixing bowl, combine the cooked lentils, onion, tomatoes, cucumber, parsley, and mint.
  5. In a small bowl, whisk together the olive oil, lemon juice and zest, salt, pepper, and cumin (if using).
  6. Pour the dressing over the lentil mixture and toss gently until evenly coated.
  7. Let the salad sit for at least 10 minutes at room temperature before serving, allowing the flavors to meld.
  8. Serve chilled or at room temperature. Adjust seasoning to taste and enjoy your refreshing lentil salad!

Notes

Refreshing, flavorful, and wonderfully versatile, lentil salad has become a staple for those seeking delicious meals that combine ease with nutrition. Whether you're looking for a light lunch, a vibrant dinner starter, or a hearty component for buffets and picnics, this salad adapts seamlessly to your needs.

Tips and Tricks for the Perfect Lentil Salad

  • Cook lentils just until tender: Overcooked lentils lose their shape and can become mushy. Start checking them after 20 minutes and drain immediately when they're al dente.
  • Chill your lentils: For a salad with firmer texture, rinse cooked lentils with cold water to stop cooking and keep them from getting mushy.
  • Customize your herbs: While parsley and mint add freshness, cilantro or dill are great substitutes for a different twist.
  • Don’t skip the lemon zest: It adds a bright, aromatic note that lifts the overall flavor profile.

Preparation Insights

  • Chop vegetables uniformly: This ensures every bite is balanced and visually appealing.
  • Marinate for flavor: Allowing the salad to sit for at least 10 minutes helps the dressing infuse and melds the flavors beautifully.

Serving Suggestions & Variations

  • Serve over greens: Pair the lentil salad with arugula, spinach, or mixed greens for a more robust meal.
  • Add cheese: Crumbled feta or goat cheese can bring a creamy, tangy element.
  • Enrich with seeds or nuts: Toasted sunflower seeds, pine nuts, or chopped walnuts offer extra crunch and nutrition.
  • Pair with grilled proteins: This salad complements grilled chicken, salmon, or even roasted vegetables for a balanced plate.
Feel free to adapt the recipe to your preferences or seasonal produce. With its nourishing base and fresh flavors, lentil salad is a dish you'll return to all year round!
