Method
- In a large bowl, combine flour, salt, sugar, and yeast. Mix well.
- Stir in warm water and olive oil until a rough dough forms. Knead by hand or with a mixer for about 8-10 minutes until smooth and elastic.
- Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Gently punch down the dough and divide into 8 equal pieces. Shape each piece into a ball, cover, and let rest for 10 minutes.
- On a floured surface, roll each ball into a 6-inch circle about 1/4 inch thick.
- Preheat the oven to 250°C (480°F) and place a baking sheet or stone inside to heat.
- Carefully place rolled dough on the hot baking sheet. Bake for 3-5 minutes until puffed and slightly golden. The pita should swell, creating a pocket.
- Remove from oven, wrap warm pitas in a clean towel to keep them soft, and enjoy fresh or store for later.
