- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, as instructed on the package. Reserve ½ cup of the pasta water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and red onion, sautéing for about 2 minutes until fragrant.
- Add the zucchini, carrot, and both peppers to the skillet. Cook for 3–4 minutes, stirring occasionally, until they start to soften.
- Stir in the cherry tomatoes and peas, cooking for another 2–3 minutes until the tomatoes begin to soften and release their juices.
- Return the cooked pasta to the skillet. Add salt, black pepper, oregano, and lemon juice. Toss everything gently to combine.
- If the pasta appears dry, add a splash of the reserved pasta water to reach the desired consistency.
- Turn off the heat and sprinkle fresh basil over the pasta. Mix gently.
