  • 2 unit pita bread cut into bite-size pieces
  • 2 cup romaine lettuce chopped
  • 1 cup tomato diced
  • 1 cup cucumber diced
  • 0.5 cup radish thinly sliced
  • 0.5 cup red onion thinly sliced
  • 0.5 cup parsley chopped
  • 0.25 cup mint leaves chopped
  • 0.25 cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon sumac
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Preheat the oven to 180°C (350°F). Place the pita bread pieces on a baking sheet and bake for 8–10 minutes, or until golden and crispy. Let them cool.
  2. In a large salad bowl, combine the chopped romaine lettuce, diced tomatoes, cucumbers, radishes, red onion, parsley, and mint. Toss gently to mix.
  3. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper to make the dressing.
  4. Add the toasted pita pieces to the salad bowl and pour the dressing over. Toss everything gently so the pita stays crunchy, and serve immediately.
