  • 0.5 teaspoon black pepper
  • 1 teaspoon salt to taste

  • 2 tablespoons fresh parsley chopped, to finish

Method
 

  1. Heat the olive oil in a large pot over medium heat. Sear the beef cubes until browned on all sides, working in batches if necessary. Remove the beef and set aside.
  2. In the same pot, sauté the onion, carrots, and celery until the onion is translucent and vegetables start to soften, about 5 minutes.
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Return the browned beef (and any juices) to the pot. Stir in the tomato sauce and tomato paste. Mix well to coat the beef and vegetables.
  5. Pour in the beef broth, and add the potatoes (if using), thyme, black pepper, salt, and bay leaves. Bring to a boil, then reduce the heat to low and cover with a lid.
