- Preheat your oven to 200°C (390°F). Cut the tops off the bell peppers and remove seeds and membranes, keeping the peppers whole. Set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 2 minutes. Stir in garlic and cook for another minute.
- Add ground turkey to the pan and cook, breaking it apart, until browned. Mix in the grated carrot, chopped tomatoes, and spinach. Cook for 5 minutes, stirring often.
- Remove from heat and add cooked brown rice, light mozzarella cheese, oregano, salt, and pepper. Stir until well combined.
- Fill each bell pepper with the mixture and arrange them upright in a baking dish. Sprinkle a little more mozzarella on top of each pepper.
- Add about 1/4 cup water to the bottom of the baking dish. Cover the dish with foil and bake for 30 minutes. Uncover and bake for an additional 10 minutes or until the peppers are tender and the cheese is golden.
- Remove from oven. Sprinkle with fresh parsley and serve hot.
