Ingredients

  • 4 units bell peppers any color, whole and tops removed
  • 1 cup cooked brown rice can replace with quinoa for lower carbs
  • 350 gm lean ground turkey can use chicken or soy protein
  • 0.5 unit onion finely chopped
  • 2 cloves garlic minced
  • 1 cup chopped tomatoes fresh or from a can, no skin
  • 1 unit carrot small, grated
  • 1 cup spinach fresh, chopped, or frozen
  • 0.5 cup shredded mozzarella cheese light plus a little extra for topping
  • 1 tablespoon olive oil
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley chopped, for serving

Method

  1. Preheat your oven to 200°C (390°F). Cut the tops off the bell peppers and remove seeds and membranes, keeping the peppers whole. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 2 minutes. Stir in garlic and cook for another minute.
  3. Add ground turkey to the pan and cook, breaking it apart, until browned. Mix in the grated carrot, chopped tomatoes, and spinach. Cook for 5 minutes, stirring often.
  4. Remove from heat and add cooked brown rice, light mozzarella cheese, oregano, salt, and pepper. Stir until well combined.
  5. Fill each bell pepper with the mixture and arrange them upright in a baking dish. Sprinkle a little more mozzarella on top of each pepper.
  6. Add about 1/4 cup water to the bottom of the baking dish. Cover the dish with foil and bake for 30 minutes. Uncover and bake for an additional 10 minutes or until the peppers are tender and the cheese is golden.
  7. Remove from oven. Sprinkle with fresh parsley and serve hot.

Notes

Stuffed peppers are a favorite in many homes, thanks to their vibrant appearance and incredible adaptability. Whether you’re seeking a lighter meal option or a hearty, comforting dish, stuffed peppers can be customized in countless ways to suit your taste or dietary needs.

Practical Tips for Perfect Stuffed Peppers

Choose peppers of similar size for even cooking and a visually appealing platter. If you prefer a softer texture, blanch the peppers in boiling water for 2-3 minutes before stuffing and baking—they'll turn out deliciously tender.
Don’t limit yourself to ground turkey: ground chicken, beef, or even plant-based meat alternatives work beautifully. Try swapping brown rice for quinoa, bulgur, or cauliflower rice for a lower-carb version.
To avoid watery filling, sauté all vegetables well before mixing with the rice and turkey. This removes excess moisture, ensuring that every bite is full of flavor.

Extra Techniques & Flavor Boosts

For a meltier texture, cover the baking dish with foil for most of the baking time, then uncover for just the final 10 minutes to get that golden cheese on top. Add a pinch of smoked paprika or a dash of hot sauce for an extra kick.

Serving Suggestions & Creative Variations

Serve your stuffed peppers with a crisp green salad or roasted vegetables to create a complete and colorful meal. If you want to experiment, try stuffing mini sweet peppers for a fun appetizer or party snack.
Leftovers reheat wonderfully—simply cover with foil and warm in the oven. You can even freeze extra peppers for up to 2 months, making them a great make-ahead option for busy weeks.
The beauty of stuffed peppers is their versatility—experiment with ingredients and seasonings, and make each batch your own!
